Khamang kakdi (Cucumber raita with tadka)



Khamang kakdi raita

Khamang kakdi raita is one of the variation of raita. Raita is most popular side dish in Indian recipes
.

Ingredients for khamang kakdi raita

1)      1 medium size cucumber, finely chopped
2)      1 tbsp roasted peanuts coarsely ground
3)      salt as per taste
4)      sugar as per taste (optional)
5)      Lime / lemon juice of 2 tsp or as per tatste
6)      2 tsp coriander finely chopped
7)      1 pinch of asafoetida
8)      1 tbsp oil,
9)      ½ tsp mustard seeds
10)   2 tsp green chilli chopped
11)   ¼ tsp turmeric powder
12)   ¼ tsp chilli powder

Method for preparation of khamang kakdi raita

1)      Mix chopped cucumber, ground peanut, salt, sugar, lemon juice, finely chopped coriander in a bowl.
2)      Heat oil in pan. Add mustard seed in oil.
3)      When mustard seeds crackle, add chopped green chilli and turn off the heat immediately.
4)      Add asafoetida, turmeric and chilli powder in oil.
5)      Add the oil to the cucumber mixture kept in bowl and mix well.
6)      Garnish with finely chopped coriander

You can add chat masala
