This is one more restaurant style recipe of mix
vegetables but rich in cream and cheese.
This is mild to medium hot recipe.
Ingredients
Vegetables:
1)
1 small bowl chopped and half cooked carrot
(gajar), baby corns and beans(farasbi)
2)
1 small onion chopped cut in to cubes
3)
1 small capsicum (simla mirchi)
4)
2 tbsp paneer cut in to small cubes
For curry paste:
1)
1 tbsp oil
2)
1 medium onion chopped
3)
10-12 cashew nuts
4)
1 tsp magajtari seeds (soaked for ½ hour in
water)
5)
1 tsp green chilli finely chopped
6)
1 tsp ginger finely chopped
7)
5 garlic cloves
8)
1 small tomato finely chopped
Spices:
1)
1 bay leaf
2)
2 cloves
3)
2 small piece of cinnamon
4)
2 cardamom
5)
¼ tsp turmeric
6)
1 tsp kashmiri red chilli powder
7)
¼ tsp garam masala
8)
½ tsp kitchen king masala
9)
½ tsp coriander powder
10)
½ tsp cumin powder
11)
1 tsp readymade paneer-butter-masala powder
For curry
1)
1 tbsp mawa
2)
2 tbsp tomato ketchup
3)
1 tbsp curd
4)
1 tbsp fresh cream (malai)
5)
1 cheese cube
6)
1 tsp kasuri methi
7)
1 tbsp finely chopped fresh coriander
8)
salt and sugar as per taste
9)
1 tbsp oil
10)
1 tbsp butter
Method for paste
1)
Heat oil in a pan
2)
Add chopped onion and fry until color becomes light
brown
3)
Add cashews, mugajtari seeds, green chilli, ginger,
garlic cloves and sauté for 1 minute
4)
Add finely chopped tomato and sauté for another
minute
5)
Switch off the gas, cool down the mixture and
blend it to coarsely paste.
Preparation
1)
Heat the oil and butter in the non-stick pan
2)
Add bay leaf, cloves, cinnamon and cardamom
3)
Add onion and capsicum and sauté for ½ minute
4)
Add paste which we prepared and sauté till the
oil starts to leave the sides of the paste.
5)
Add dry spices and 1 tbsp water and sauté 1
minute. Add half cooked vegetables and paneer, add water as you require and
stir simmer on a low flame
6)
Add mawa, tomato ketchup, curd and sauté for ½ minute
7)
Add1 tsp shredded cheese, salt as per taste, sugar
as per taste and mix it well
8)
Cook till the oil starts to leave the sides
9)
Add kasuri methi and fresh cream and mix it well
10)
Turn off the heat.
11)
Garnish Veggie Cheesy in Gravy with fresh cream,
cheese and finely chopped coriander. Serve hot with roti, naan or rice.
