Rava Nariyal Laddoo



How to make rava nariyal laddu

Rava nariyal laddu is the sweet which is prepared for different occasions in India. Be it Varalakshmi vrat, Ganesh Chaturthi, Diwali or even in family functions like wedding.

This is traditional recipe of rava nariyal laddu (semolina and coconut laddu).
Rava nariyal laddus are very easy to make and taste very good.


Ingredients

1)      1½ cup sugar
2)      1½ cup rava (sooji) / semolina
3)      1 cup freshly grated coconut
4)      ½ tsp cardamom (elachi) powder
5)      1 tsp chopped chashew nuts
6)      1 tsp raisins (kishmish)
7)      ½ cup desi ghee


Method

1)      Heat desi ghee in a nonstick pan
2)      Add rava in the heated ghee, stir often and roast the rava on a low flame till it smells good and changes its color to light brown and ghee starts separating from rava
3)      And ghee has also started separating from the rava.
4)      Now add freshly grated coconut and mix well
5)      Stir and roast the mixture until raw coconut smell disappears
6)      Add cardamom powder and chopped cashew nuts, mix well and turn off the flame
7)      For sugar syrup, add sugar in pan. Add water in sugar such that it just covers the sugar. Heat the pan on medium flame and stir continuously until sugar melts to syrup
8)      Heat the syrup until it forms 3 threads consistency
9)      Put one drop syrup on a plate, if it does not spread then chasni is ready. When you hold a drop of sugar syrup in your thumb and forefinger and pull the finger away from thumb slowly, you should see three threads forming of syrup.
10)   Now add the sugar syrup to roasted rava and coconut mixture and mix well
11)   Allow it to cool at room temperature
12)   Once cooled, again mix well
13)   Make small ball of mixture (laddoo) and press raisin on laddoo
14)   Make all laddoos of equal size from the mixture

Store it in an air tight container. If stored in fridge, these laddoos will remain good from 2 to 3 weeks.
